Honey Do and I shopped local this past weekend at the Farmer's Market. We made a feast of fresh tomatoes, eggplant, cucumbers, corn, okra and yellow squash topped off with a sweet corn muffin.
I know...fried... but it was awesome! We were full as a tick and happy!
I like to give my okra and eggplant a milk and egg bath then, I dredge them in self-rising cornmeal. Fry in very hot oil and they don't absorb as much oil. Season with salt. If you can, fry outside in a cooker--- that way the smell, the heat and splatter is all outside. Honey Dos are good for that. : )
Blessings,
Mimi
"And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground--
everything that has the breath of life in it-- I give every green plant for food." And it was so."
Genesis 1:30 NIV Bible
Looks SO delightful! I smiled when I saw your instagram picture...while we were nearby on the gulf coast! Sounds like you enjoyed it! There's not many summery things I love better than summer produce... YUM. {and thank you for the tips!}
ReplyDeleteIt was good! Hope y'all had a great visit! One day we'll have to meet up when you're over this way : )
DeleteThat looks great! I love okra, my friend's mom makes it when we visit her n Kentucky!
ReplyDeleteI like it best fried. Usually this time of year, everyone is trying to give it away because they grow so much.
