Summer Feast

Hey!

Honey Do and I shopped local this past weekend at the Farmer's Market.  We made a feast of fresh tomatoes, eggplant, cucumbers, corn, okra and yellow squash topped off with a sweet corn muffin.


I know...fried... but it was awesome!  We were full as a tick and happy!
I like to give my okra and eggplant a milk and egg bath then, I dredge them in self-rising cornmeal.  Fry in very hot oil and they don't absorb as much oil.  Season with salt.  If you can, fry outside in a cooker--- that way the smell, the heat and splatter is all outside.  Honey Dos are good for that. : )
